Conundrums

The Boyfriend just had his housewarming party (oh yeah, did I mention The Boyfriend bought a house?). I tried to be a domestic superwoman, so when the party guests asked if they could bring anything, I said, JUST YOURSELF!! And maybe some tortilla chips.

So. . . . EVERYONE brought tortilla chips. And even though there were 2 party dips, guac, and salsa, we still had 7 bags of tortilla chips leftover.

Conundrum #1: What do you do with 7 bags of tortilla chips?

Well, in our case, we spend days and days and days eating salsa. And then I decided to make shrimp ceviche for dinner using this recipe. Which was basically salsa with shrimp. And I loved it. Yeah. . . I think I might be addicted to salsa.


All I'll say about the recipe is when it said to soak the chopped up shrimp in lime juice for only 5 minutes until cooked, that was total bull. After waiting around for about an hour, I finally got impatient (or really, I just got really hungry) and nuked the freakin' shrimp for a minute. I probably ended up overcooking it, but oh well.


Onto the next conundrum. . . .

My company has "rewarded" everyone by allowing jeans days for the rest of the year. Which is great . . . . except I desperately need to do laundry and have NO clean jeans.
 

So. . . . .

Conundrum #2: What do you wear to work when it's jeans days, and everything's either too "business formal" or not work appropriate?

Well, in my case you wear this crazy getup.

I got a lot of weird stares because of my super dirty boots.

And I'll admit, the faux leather jacket was probably a bit much for work. . . . but I JUST got it and it was super comfy. So oh well. I looked like a badass at work. I can think of worse things.

I <3 this tiny purse. It's super convenient and is big enough to hold just enough, including my phone, some cash and some Chap Stick. And because the studs are both gold and silver, it also matches EVERYTHING.




FANCY Date Night

Sadly, I thought after graduating from grad school would mean I would have more time for ME. Unfortunately, it just means more time to work overtime. Thus I've basically been living in comfy work appropriate clothes and NO MAKEUP. This isn't because I feel like I don't need makeup, I just don't see the point.
Sorry for the sorority pose, but I think my arms don't look flabby for once! yay!!

Well, The Boyfriend broke the no makeup trend by taking me out, fancy style. It was Restaurant Week in Dallas, where many "higher end" restaurants in Dallas participate by creating Restaurant Week specific menus for a deal. We went to Stephan Pyles to take advantage of Restaurant Week, but as a sweet touch, The Boyfriend decided it was a perfect way to celebrate my graduating grad school.
We had already finished the appetizers before I realized I had a camera on me and started taking pictures of the awesome food.

I had a cucumber martini while waiting for our table. SUPER refreshing and yummmmmm. I loved it so much we had to go back to the bar to order another one before we could leave. This is my new goal in life: Find this recipe!!!

Breakfast Indulgence

I got this recipe from a girlfriend. They are the best muffins ever. . . . . I like to make them mini muffin size so I don't feel so bad when I eat 20 million billion of them at once.

White Chocolate Raspberry Muffins
Makes about 48 mini muffins, or 1 dozen regular muffins

Ingredients:
~1 package of 8 oz cream cheese, softened
~ 1 cup sugar
~2 eggs
~1 tsp vanilla extract
~1.5 cup flour
~2 tsp baking powder
~1/2 tsp salt
~1 cup fresh raspberries
~ 1/2 c vanilla or white chocolate chips (but I use 1 cup. Tee hee)

Directions:
1) In a large bowl, beat cream cheese adn sugar until smooth.
2) Add eggs and beat well after each addition.
3) Stir in vanilla.
4) Combine the flour, baking powder, and salt
5) Add to the cream cheese mixture just until blended
6) Fold in raspberries and chips
7) fill muffin cups. Bake at 375 F for about 15 minutes, or until an inserted toothpick comes out dry.

Summertime Cool

Despite the title, I am not summertime cool. First of all, this is Texas. Our lows have been in the upper 80s. Second of all. . . . . . . . GAH!!!! I'm freakin' out here!! I have a mountain of homework to take care of, and I have a mountain of work. Add on the fact that my boss asked me to lead a presentation for some "very important people" that are gracing us with their presence this week at work. Don't get me wrong, I was pleasantly surprised that they asked, but still . . . .FUN FUN FUN!!!!! NOT STRESSFUL AT ALL!!!!! EEE!

Luckily I have this blog to calm me down.

Cucumbers have always been a favorite veggie of mine. And it always reminds me of summer since my mom always had a veggie garden in the summer. Surprisingly cucumbers grow really well when it's as hot as the surface of the sun.

So I decided to make a summer salad last weekend. I wanted to add some tomatoes to go with my cucumbers for a splash of color. It's always fun to make pretty food. :)

I based this salad from this recipe, with a few of my own changes.

What you need:
1 large cucumber
1 small container of grape tomatoes
sea salt
2 tablespoons red wine vinegar
2 tablespoons balsamic vinegar
couple cloves of minced garlic
1/2 cup of olive oil



For the dressing, I mixed 2 tbsp of red wine vinegar and 2 tbsp balsamic vinegar with 1 tbsp dried basil and 1/2 tbsp oregano.


In another bowl, I mixed 1/2 cup of extra virgin olive oil with a couple cloves of minced garlic (I love garlic, so I kinda just scooped up whatever suited my fancy, so it's up to you how much you put in here). Let both bowls marinate for awhile (10 minutes minimum).
Just FYI, the dressing starts smelling super good. I was chopping onions for something else I was making (though you can add onions in this recipe if you want. I just didn't). Usually chopping onions causes me to cry like a baby, but in this case, I was completely fine. Thanks magical dressing!!

While the dressing is marinading, Sloppily peel 1 giant cucumber (a little peel is allowed) and sliced into a bunch of half coins.
Then, since I happened to have grape tomatoes, I cut each tomato in half to release the juices.


Mix the 2 veggies together


Add some salt (sea salt is preferable, unfortunately I only had regular)


Grab the two bowls of dressing and mix together


Add combined dressing to the salad (FYI, this is WAY too much dressing, but save it. It makes great dressing for other salads)




Yum yum yum!! And healthy! Not to mention, super cheap!
